I cannot find the words to share just how excited I was when Nolan's football teams lost their last games... It sounds worse than you think, but his community team still placed 2nd in the league, so at least one of the teams did well! I honestly don't even know how I survived juggling his two football teams with my pregnancy fatigue, working, moving, but I did. Now it's basketball season, which already feels like a piece of cake! I don't think I ever mentioned it, but last year, Nolan was awarded 'MALE ATHLETE OF THE YEAR' out of all the grade 7 boys at his school. He goes to a school with 700 kids...so this award even surprised him. I wonder if he is going for the same award this year as he continues to join every sport he possibly can! The boy thrives when he is playing a sport, any sport! So even if I am dragging my tired pregnant butt to practices and games, I am constantly reminded by people with older kids, that I will miss these days when they're gone and I'd be lying if I said I don't love watching the boy in action!
So now that life is a lot less hectic and we are becoming more and more settled in the new house, I'm left going only slightly crazy having more time to think about exactly how many days there are until we meet our new baby! I am not loving the third trimester at all. I am cursed with pregnancy insomnia which makes for long days, I'm crampy and my back aches whether I've been standing all day or not. Oh and this baby is riding low...which has brought on a whole new set of symptoms that might traumatize someone reading this if I blog about them! I'm not complaining, because I am so grateful for our miracle baby and I love feeling him move and kick, but I will love it even more when I can smother him with kisses and see his little face!
I am just over 32 weeks, I can still see my toes (barely) and zip up my jacket (barely). We are struggling with naming this child, which has become a conversation that doesn't seem to end well for Tom and I. The baby's room is coming along very very slowly, but I also need to decorate for Christmas and remember to buy presents for Nolan yet (Note: Can't forget about Nolan!)...sorry, I'm just trying to prioritize things in my scattered hormone drunken brain.
Now for the good stuff. This is a recipe I found on Goop. These pancakes are so yummy that I will probably be making them for lunch today. The recipe doesn't make a ton, but they are a nice addition to our weekend eggs and bacon. These are gluten-free and dairy-free for those of you who have dietary restrictions. I don't always love the texture of baking with coconut flour, but these are just so tasty that they won over my heart and stomach with just one bite and now I can't stop thinking about them!
Coconut Flour Pancakes
Ingredients:
- 1/4 cup coconut flour
- 1/2 tsp baking powder
- 1 pinch salt
- 3 tbsp coconut oil (plus extra for frying)
- 1 1/2 tbsp honey
- 3 large eggs
- 1/3 cup almond milk
- 1/8 tsp almond extract
- 1/2 tsp vanilla extract
- 1 tsp lemon zest
Directions:
- In a small bowl, whisk together coconut flour, baking powder and salt. Set aside.
- In a medium bowl, cream together the coconut oil and honey until almost smooth. Whisk the eggs in one at a time. Add almond milk, almond and vanilla extract and lemon zest. (Do not leave out the lemon zest!)
- Fold dry ingredients into wet ingredients and combine until just mixed. Do not over mix the batter. (Batter will be runny and this is A-OK)!
- Heat 1 tbsp coconut oil in a large pan over medium-high heat.
- Add batter (1 heaping tbsp = 1 pancake). Cook for 2-3 minutes on one side, then 1-2 minutes on the other. This batter won't bubble up like other pancake batter so be sure to check frequently.
- Serve with maple syrup and enjoy!
