We are finally back to school and routine and this week has been a bit crazy for me as I try to find that routine again...
Nolan started a new middle school. I have never actually seen Nolan get nervous for anything other than a big football game, but monday came and he was extremely nervous for his first day! Of course Tom told him to enjoy his first swirly the night before, nice. First day of school was ok, the second day of school [with a smaller amount of nerves than the first] was good. Day 3 was great. Day 4 was even better...he loves all of his teachers and is so excited to learn. Day 5 was like it was day 100. Nolan thrives in any social environment, he is happy with his teachers...only one issue...GIRLS. He happened to start running with a not so great couple of girls which brings up a lot of family discussions and trying to use what we can as a learning opportunity. Have I mentioned that this is my least favorite chapter of parenting? I might have to get the serenity prayer tattooed on my face so every time I look in the mirror I can be reminded that God's looking out for my boy...and my heart!
So pretty much all I do now is drive. I drive the boy up down the hill to school, then I drive him back home. Everyday. Am I crazy? Some might say yes, but the years are slipping away from me as he is growing up way too fast so I will just keep driving.
I am only three days away from my Whole30 being over. Its been so easy this time! I have been well prepared and feel great. I feel so much better this time than I ever did during my first Whole30. I can't imagine I will change too much once it is over other than the occasional pumpkin spice latte, glass of wine and maybe some ice cream on the weekend! I have been making such great food, which is probably why it's been easier too.
You know your self-control/sugar demons are under control when you can have dinner guests and make them dessert you cannot eat, dish it up for them and watch them eat it in front of you! Oh and I didn't even drool... I asked what it tasted like and if it was good about 10 times because I wanted to live vicariously through them, it worked, kind of.
I have a couple giant bags of beautiful organic apples that need to be used and this was the perfect way to use them and 100% appropriate for fall! A crust-less apple pie that tastes like heaven and only takes about 15 minutes to cook! Hello fall...
Crustless Apple Pie
Ingredients:
- 2.5-3.5 lbs of apples, peeled and chopped
- 3 tbsp butter
- 1/3 cup coconut sugar
- 1 tbsp cinnamon
- 2 tsp arrowroot powder [dissolved in 1/4 cup water]
- toasted pecans, optional
- ice cream, optional but highly reccommended
- whip cream, optional
Directions:
- Peel and chop apples. In a medium frying pan, melt butter over medium-high heat. Add the apples and cook, stirring occasionally until they begin to soften, approx 10 minutes.
- Add coconut sugar and cinnamon. Stir to coat the apples. Cook until apples are soft enough to pierce with a fork.
- Slowly add arrowroot/water mixture a little at a time. Stir apple mixture around until sauce thickens up. [You might not need to add all of the arrowroot mixture, depending on how thick you want your sauce].
- Add toasted pecans and serve with ice cream...and topped with whip cream! Enjoy!
