This weekend we attended a beautiful wedding in Vancouver. The people who got married are pretty awesome and the vows they wrote for each other made me cry...love is simply, a beautiful thing! I was reunited with my darling son after he spent a week at camp! He had the best time with his cousin. Our drive home was full of stories from camp. I am so thankful that we can give Nolan these experiences. He does not take them for granted and it is just so sweet hearing about all the adventures as well as new friendships made in just one week!
I have successfully been baking and cooking a lot with yam's this summer. The men in my life are quite pleased with the goodies so I just keep 'em coming! These are nut-free which means they will make a great lunch snack once the kids go back to school! This recipe for brownie bites is so quick and easy to make, they are a paleo dessert that is sure to satisfy your need for chocolate!
Brownie Bites
Ingredients:
- 2/3 cup yam pureé
- 4 tbsp clarified butter
- 2/3 cup cocoa powder
- 1/2 cup coconut flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2/3 cup maple syrup or honey
- 1 large egg, beaten
- 1 1/2 tsp vanilla
- 1/3 cup enjoy life chocolate chips [optional]
Directions:
- To make yam pureé, peel and chop yam. Boil until soft, then pureé in a food processor or using a hand blender until smooth.
- Preheat oven to 350 degrees. In a medium sauce pan, melt butter. Add cocoa to melted butter and let cool.
- In a medium bowl, whisk together flour, baking powder and salt. Stir in maple syrup, sweet potato, egg, vanilla and cocoa mixture. Stir until well mixed. Add chocolate chips if desired.
- Roll dough into walnut size balls and place on a parchment-lined cookie sheet. Flatten to a 1/2 inch thick pancake.
- Bake for 10-15 minutes, until tops of brownies start to crack. Cool on a cooling rack then serve!
