It's a cold week in the Okanagan...temperatures reaching only mid-twenties....guys, I'm freezing over here! I want the 40's back! Besides the fact that my grass turned extra crisp in the heat and there was a new forest fire reported every day...I quite enjoyed the heat! Isn't that why we live here and what we wait all winter long for? My poor son is in a sailing camp all week and this morning when I dropped him off, he had goosebumps. Sailing is much more fun in the sun!
This week I whipped up a batch of this fabulous Coco-Nut Granola. It's so tasty, especially when it is still warm from the oven. I love the crunch of the coconut flakes after they are roasted. I made this batch with brown rice syrup because I like how it caramelizes the coconut flakes, but you could also make this with maple syrup!
Coco-Nut Granola
Ingredients:
- 3 cups raw coconut flakes
- 2 cups almonds, pecans, cashews or walnuts (chopped)
- 1 tsp cinnamon
- 5 tbsp coconut oil, melted
- 3 tbsp brown rice syrup or maple syrup
Directions:
- Preheat oven to 250 degrees.
- Combine all of the ingredients and spread evenly on a parchment lined cookie sheet.
- Bake for 20-25 minutes or until golden, turning halfway through.
- Remove from the oven and allow to cool.
