I dreamt up these bad boys the other day. They were divine! They tasted even better in real life than I imagined they would...isn't it usually the opposite?! This recipe was inspired by the idea of combining a Reese Peanut Butter Cup with a cookie...and successfully doing so in the healthiest way! I ate 3 cookies right out of the oven, but Tom ate 4, so...
Consider this your warning, although these are healthy cookies, they are extremely tasty and can lead to overeating which therefore defeats the purpose of making healthy cookies!
Peanut Butter Stuffed Cookies
Ingredients:
- 1 1/2 cups almond flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup coconut sugar
- 1 egg
- 3 tbsp coconut oil, melted
- 1/2 tsp vanilla
- Enjoy Life chocolate chips
Filling:
- 2 1/2 tbsp coconut oil, melted
- 1/2 cup all-natural peanut butter
- 5 tbsp honey
- 1/2 tsp salt
- 1/2 tsp vanilla
Directions:
- Preheat oven to 375 degrees.
- In a medium bowl combine almond flour, baking soda and salt.
- In a small bowl, whisk egg and coconut sugar. Add coconut oil and vanilla. Mix well.
- Combine the wet ingredients with the dry ingredients. Place dough in the refrigerator while you make the filling.
- In a food processor combine coconut oil, peanut butter, honey, salt and vanilla. Mix well and set aside.
- Remove cookie dough from the refrigerator. Roll dough into 1" balls and place 2-inches apart on a parchment-lined cookie sheet.
- Gently hollow out the center of each ball, forming a little nest.
- Fill each nest with 1 tsp of the peanut butter mixture. Top each cookie with chocolate chips.
- Bake for 8-10 minutes, or until edges are browned.
If you have left-over filling, make a few of these reese cups while your cookies bake!
