These are legit. Like restaurant legit. Fajita's are one of my most favorite dishes in the whole wide world! In case you're curious, the best ones I've ever had were in Maui at the Hard Rock Cafe in Lahaina...so good. These fajita's make the perfect paleo dinner and as well as a great salad topper for lunch the next day!
Steak Fajitas
Ingredients:
- 2 steaks
- coconut oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 white onion, sliced
- 1 garlic clove, minced
- lime
- salt & pepper
- cumin
Directions:
- Sprinkle steaks with salt and pepper and a pinch on cumin.
- Cook steaks in a frying pan over medium heat or on a grill. Squeeze lime juice on both sides while cooking.
- Take steak out of the pan and set aside.
- In a small amount of coconut oil, sauté the peppers, onions and garlic. Squeeze lime juice over the vegetables.
- Slice the steaks and add to the vegetables. Cook together for 2 minutes.
- Serve warm with romaine lettuce leaves and fresh salsa and guacamole (recipe below).
Fresh Salsa
Ingredients:
- 1/4 tomato
- small slice of onion, chopped
- 1 garlic clove
- lime juice
- dash salt
Mix all of the ingredients together and serve.
Easy Guacamole
Ingredients:
- 1 avocado
- 1 garlic clove, minced
- dash of salt
- lime juice
Place all of the ingredients together in a bowl and mix until smooth by hand or with a hand blender.
