It appears that I can trick Nolan into thinking brussel sprouts taste good with this salad! I watched him as he scarfed this down so fast....meanwhile I'm thinking about how clever I am, then he casually tells me that he knew they were brussel sprouts the whole time. It's hard to outsmart a 12 year old. The point here is that he liked it and so did I! A healthier version of the mix you can get at costco, all props to the dressing!
Kale & Brussel Sprout Salad (serves 4)
Ingredients:
- 8 brussel sprouts (thinly sliced)
- 6 leaves kale (stemmed & sliced)
- 1/3 cup sunflower seeds
- 1/4 cup dried cranberries
- 1 tbsp whole grain mustard
- 3 tbsp fresh lemon juice
- 3/4 tsp sea salt
- 1 tbsp + 1 tsp maple syrup
- 2 tbsp avocado oil
Directions:
- Stir together mustard, lemon juice, maple syrup and salt.
- Whisk in oil and set aside.
- In a salad bowl, toss the brussel sprouts and kale together.
- Add sunflower seeds, cranberries and dressing. Mix well and serve!
