it seems that we are in a good place for finding yummy paleo snacks these days! nolan is pretty pumped on all of the paleo goodies i have been making, in fact, he hasn't asked me to make the "bad" cookies or muffins in a long time! this snack, i think we were all a little nervous to eat after i made it, but it might just be one of the best dessert/snacks i have made to date! it tastes a bit like almond brittle...enjoy!
the crunch:
1/2 cup raw sunflower seeds
1/2 cup raw pumpkin seeds
1 cup almond flour
1 cup unsweetened shredded coconut
2 cups raw almonds, slivered
1/2 cup coconut oil, melted
1/2 cup honey
1 tsp vanilla
the chocolate:
1 cup enjoy life chocolate chips (or dark chocolate)
1/2 cup coconut oil, melted
2 tbsp honey
1 tbsp vanilla dash of salt
how to:
for the crunch: preheat oven to 325. in a large mixing bowl, combine the first five ingredients on the crunch. in a separate bowl, combine the coconut oil, honey and vanilla and mix well. microwave for 20-30 seconds or mix over stove to help mix better. once warm, pour the wet ingredients over the dry ingredients. mix well to coat everything! place mixture on a foil lined baking sheet. spread thin and evenly. bake for 25 minutes. remove from oven and stir around to ensure nothing burns. place back in oven for 5 minutes. remove and cool.
for the chocolate: in a small sauce pan, melt chocolate and coconut oil together over low heat. once melted, add honey, vanilla and salt. stir and mix well. remove from heat. in a foil-lined 8x8 inch baking dish, place the crunch loosely lining the bottom of the dish. pour chocolate mixture over. place in the fridge and let set for about an hour. remove and slice before serving. keep refrigerated.
